Spiced Stuffed Bell Peppers

Writer: Olivia NewtonOlivia Newton

Evidently, we've been very successful at trying new recipes these days, and we're absolutely thrilled! We've got a fab new #recipe perfect for lunch or dinner and can be served with a side of salad, mashed potatoes or veggies and gravy. You can use any kind of large bell peppers you have on hand, but we've used green ones for this recipe.

Prep time : 5 minutes

Cook time : 20 minutes

Ingredients :

  • 1 large bell pepper

  • 3 sliced cloves of garlic

  • 100g of shredded (cooked) lamb

  • 1/2 of a chopped tomato and 1/2 of a chopped red onion (brown and white will do as well)

  • 200 g of chopped mushrooms

  • 1/2 sliced jalapeno

  • 100 g of grated cheddar cheese

Method :

  • Preheat your oven to 350F/180C. In a pan, sauté the garlic and onions on medium heat after adding a tablespoon of olive oil. While the onions turn translucent, add the shredded lamb and mushrooms followed by the chopped tomatoes.

  • Next you can add spices of your choice. We added a quarter teaspoon of salt and half a teaspoon of pepper, chili powder, turmeric and ginger & garlic paste.

  • After a minute, turn off your gas and transfer the filling into the bell pepper after cutting 2 cm off the top and removing the seeds and stem. Top the filling with grated cheddar cheese and bake for 15 minutes. Serve with a salad or any other side dish of your choice.

We’ve used lamb as part of the filling but you can use any protein you have on hand including red kidney beans, soya meat, chicken cubes or a cup of quinoa. The same goes with veggies too! This portion works well for two, but you can double the quantity for 4 or more.

Hope you enjoy the recipe and stay tuned for more yummy creations from our kitchen!
