
With summer berries in season, we wanted to incorporate these delicious antioxidants into our breakfast and we've got a scrumptious new Blueberry Waffle recipe just for you!
Prep time: 3 minutes
Cooking time: 10 minutes
Ingredients: (makes 4 waffles)
1 cup each of flour & milk
1 tsp each of vanilla essence & baking powder
2 tbsp of sugar
1 tsp of salt
1 egg
50 grams of blueberries
Preparation:
In two bowls, whisk separately the dry and wet ingredients. Combine and mix until smooth, without lumps. Add in the blueberries and lightly mash a few into the mix.
Preheat your waffle maker and brush on some butter to avoid the mix from getting stuck.
Pour a spoonful of the mix and gently spread it along the squares. Cook until a light shade of golden brown or crispy.
Garnish with additional blueberries and icing sugar and glaze with maple or any syrup of your choice.
Don’t hesitate to make a couple extra which you can pop in the freezer and toast them for a quick to-go breakfast. You can also add cinnamon powder to your mix and garnish with a jam, spread and fruit of your choice.
