
With mango season upon us and deliciously here to stay, we thought to refresh your summer staples with this mouth-watering Mango Popsicle recipe. Quick and simple to make, you'll just need a blender and some popsicle moulds, which you can find on Amazon if you don't have them already.
Ingredients:
2 mangoes (Alphonso mangoes used in this recipe, but any will do)
1 cup of thick coconut milk
Preparation:
To a blender, peel and slice the mangoes (excluding the seed) and add a cup of coconut milk. Be sure to get all the flesh of the mango into the blender.
Blend for about 30 seconds on high pulse and transfer into the popsicle moulds for freezing. Keep for at least 8 hours or overnight and enjoy the creamy delicious popsicles.
With additional mix, you can put into a glass with some ice and enjoy a mango shake. We recommend using only coconut milk in this recipe to get a creamy and rich taste for the popsicles. Hope you enjoy it :).
