Summer Mango Popsicles


With mango season upon us and deliciously here to stay, we thought to refresh your summer staples with this mouth-watering Mango Popsicle recipe. Quick and simple to make, you'll just need a blender and some popsicle moulds, which you can find on Amazon if you don't have them already.


Ingredients:

  • 2 mangoes (Alphonso mangoes used in this recipe, but any will do)

  • 1 cup of thick coconut milk

Preparation:

  • To a blender, peel and slice the mangoes (excluding the seed) and add a cup of coconut milk. Be sure to get all the flesh of the mango into the blender.

  • Blend for about 30 seconds on high pulse and transfer into the popsicle moulds for freezing. Keep for at least 8 hours or overnight and enjoy the creamy delicious popsicles.

With additional mix, you can put into a glass with some ice and enjoy a mango shake. We recommend using only coconut milk in this recipe to get a creamy and rich taste for the popsicles. Hope you enjoy it :).
